Today was a day that my little sisters had been looking forward to since last weekend... cupcake baking day!
Last weekend, Twin A asked if we could make "dairy-three" cupcakes, also known as dairy-free cupcakes, and that "Mommy said it's okay." Unfortunately, even though we had Mommy's blessing to go ahead with the project, I had a full day of babysitting last Saturday and had no time to bake cupcakes. All week I had promised the girls that on Saturday, when there was no school, we could make the cupcakes. So here we were, Saturday, and the girls did not forget my promise. In fact, they reminded my mom about it first thing in the morning. First thing at 3:56 in the morning! Yeah, she wasn't happy about them being up that early... that's one of the ways you know that my sisters and I aren't biologically related. I would sleep until 3:56 in the afternoon if I was allowed, and they get up at 3:56 in the morning! Since my sisters are so limited in what they can eat, it's always fun to find new recipes for them to try. Plus, since they're still in the stage where they eat anything they get on their hands, you can't really let them help you with any kind of food prep that has dairy involved. When I make cupcakes or cookies that are dairy-free, it's nice to get them involved with preparing batter or dough. And even though it can get messy, and I do mean messy, it's totally worth it to see the giant smiles and hear the shrieks of joy when they see the cupcakes come out of the oven. Today we made Orange Soda Cupcakes, which they absolutely loved. We literally mixed orange soda in with the cupcake batter and it was a really cool recipe to work with. I was glad that the girls (and my other siblings) enjoyed the cupcakes, because that means that we have another recipe to use for the girls. I hope we can try other flavors like this in the future as well! |
